About the bread
I started baking so that my family and I could eat simple, healthy, delicious bread. What goes into the bread, and where those ingredients come from, matters a lot to us.
The whole grain and einkorn sourdough loaves have just three ingredients: flour, water, and salt. The French baguettes also have a fourth: active dry yeast. All the flour is 100% certified organic flour that is unbleached and unenriched with any additives. It's minimally processed and goes right from the mill into the mixer.
The Farmstead loaf (whole grain sourdough) is made entirely with organic flour from Chimacum Grainery, grown and milled right here on the Olympic Peninsula. It has seven different varieties of their whole wheat and whole grain flours.
The einkorn sourdough loaf is 100% organic einkorn flour, grown and milled in Washington by Bluebird Grain Farms. Einkorn is an ancient grain, and has never been hybridized like most modern wheats have, so its gluten is very different and many people who have gluten sensitivities are able to digest it more easily.
The French baguettes are a classic white baguette, not sourdough, but yeasted, and are made with 100% organic flour grown and milled in Washington by Fairhaven Mill.
