Our bread is made from locally sourced Colorado flour. Kris Gosar of Mountain Mama in Colorado's San Luis Vally has perfected the art of milling stone-ground whole wheat flour and we love turning it into beautiful boules. We round out the flavor profile with white and rye flour from Heartland Mills in western Kansas, which is certified organic. Flour, salt, and water are the only three ingredients in our bread. We have been cultivating a natural yeast starter that draws from the surrounding environment and is therefore unique to the area.
